SolutionThis project focuses on developing a computational model to simulate and analyse the mixing and homogenisation processes involved in producing plant-based milk emulsions. By incorporating fluid dynamics and emulsion physics, the model aims to reveal how design and process variables interact to influence emulsion structure and stability.
Impact The insights gained from this modelling effort will support the development of more stable and higher-quality plant-based milks, meeting both consumer expectations and manufacturing efficiency goals. For Sanitarium, this work offers a valuable tool to enhance product consistency and accelerate innovation in plant-based beverages.
